Toppings
Tomato passata
Mozzarella
Cooked chicken, shredded or sliced
Roasted capsicum
Red onion, thinly sliced
Baby spinach
Feta
Fresh basil
Cracked black pepper
Garlic-infused olive oil (optional, to finish)
How to Cook It
Stretch the dough to 10–12 inches.
Spread a thin layer of tomato passata over the base.
Add the mozzarella, followed by the chicken, roasted capsicum and red onion.
Top with the feta, leaving the baby spinach and basil until the last minute.
Cook in the Ridge Fireplace for approximately 2–3 minutes, rotating as needed.
Once cooked, scatter over the baby spinach and fresh basil, finish with cracked black pepper and a light drizzle of garlic-infused olive oil if desired.
Why This Pizza Works
The high heat of a wood-fired oven gives the chicken a lightly roasted finish while the capsicum becomes sweet and slightly smoky. The feta adds a salty creaminess that pairs perfectly with the fresh spinach and basil, creating a balanced pizza that's both vibrant and satisfying. It's an easy recipe that showcases just how versatile wood-fired cooking can be.
